Use a mandoline or very sharp knife. Paper-thin slices — you should almost be able to see through them. Immediately toss in lemon juice to prevent browning.
Cut top and bottom, remove skin following the curve, then cut between membranes. Catch every drop of juice for the dressing.
Whisk orange juice, lemon juice, olive oil, and salt. The dressing should taste like the Mediterranean coast.
Layer fennel on platter. Scatter orange segments, olives, and red onion. Tear mint leaves over top. Drizzle dressing.
